Ingredients:
24 small cherry or grape tomatoes.
3 ounces feta cheese, cut into 1/2 inch cubes. You can even use mozzarella balls if you prefer.
12 pitted kalamata olives
1/2 small red or sweet onion cut in to 1/2 inch pieces. If the onion is too sharp, rinse the cut pieces with water.
For dressing:
2 teaspoons fresh lemon juice
2 teaspoons red wine vinegar
2 teaspoons fresh oregano, or 1 1/2 teaspoons dried
2 Tablespoons extra-virgin olive oil
Table salt ,to taste
Freshly ground pepper, to taste
- In a small bowl whisk together the dressing; set aside. In a medium bowl or serving dish add all of the ingredients and toss carefully with the dressing. Serve immediately or keep in the refrigerator for up to 3 hours.
